SHRIMP WITH PASSION FRUIT SAUCE

ANDROS INGREDIENTS
I/ INGREDIENTS:
- Salted butter : 105g
- Powdered sugar : 50g
- Cake flour: 150g
- Full cream milk: 120g
- ANDROS Frozen Raspberry Puree : 225g
- Egg yolk : 80g
- Sugar : 50g
- Cake flour : 20g
- Corn starch : 20g
- ANDROS Raspberry Jam
II/ METHOD:
- Put salted butter, powdered sugar, and flour in a large bowl, mix well until the dough is evenly lumpy
- Put some flour on a clean table surface, then knead and roll it with your hands until the dough no longer sticks to your hands. Stuff the dough into a long pillar
- Cut the dough into small circles, bake for 10 minutes at 180 degrees C
- Heat full cream milk, ANDROS Frozen Raspberry Puree, stir well
- Combine well the mixture of egg yolks, sugar, flour, cornstarch
- Mix Raspberry cream and egg yolk mixture well
- Heat, stir well until cream thickens. Let it cool and put in ice cream catch bag
- Put the Scottish biscuits on a plate, decorate the raspberry cream around and the raspberry jam in the center, sift some more powdered sugar on top
