CALAMANSI TUNA SALAD

ANDROS INGREDIENTS
I/ INGREDIENTS
- Horn chili : 1 piece
- Garlic : 1 clove
- Tuna fillet : 150g
- Shallot : 10g
- Calamansi lime juice
- Fish sauce
- Kohlrabi : 1 bulb
- White vinegar : 60ml
- Water : 50ml
- Sugar : 60g
- ANDROS Frozen Calamansi Puree : 50g
- Roasted peanut: 20g
- Sawtooth coriander : 5 leaves
II/ PREPARATION
- Blend well the horn chili and garlic
- Cut tuna fillet into well-served square pieces
- Season tuna with shallot, calamansi lime juice, garlic chili mix, and 1 tbsp of fish sauce. Stir well
- Slice kohlrabi into well-served slices, soak with white vinegar, 30g sugar, water
- Mix 50g ANDROS Frozen Calamansi Puree, fish sauce, garlic chili mix, and roasted peanuts to make dipping sauce.
- Set tuna to the dish, garnish with sawtooth coriander and top up calamansi sauce
- Serve with sweet and sour kohlrabi
