STRAWBERRY TIRAMISU

LADY FINGERS
- Egg white: 90g
- Salt: 1g
- Sugar: 65g
- Egg yolk: 60g
- Vanilla: 3g
- Wheat flour: 65g
- Cornstarch: 10g
MASCARPONE CREAM
1. Sabayon
- Egg yolk: 20g
- Sugar: 10g
2. Mascarpone
- Mascarpone: 125g
3. Italian style meringue
- Egg white: 30g
- Sugar: 50g
- Water
4. Heavy cream
- Heavy cream: 120g
STRAWBERRY FILLING
- ANDROS Frozen Strawberry Puree: 100g
- Gelatin: 2g
STRAWBERRY SYRUP
- ANDROS Strawberry Syrup: 50g
- Hot water: 50ml
II/ PREPARATION
LADY FINGERS
- Whip the egg white with salt and sugar
- Gradually add the yolk, vanilla and flour to the mixture
- Bake the cake 200C for 10-12 minutes
MASCARPONE CREAM
1. Sabayon
- Whip them well
2. Mascarpone
- Mix well with sabayon
3. Italian style meringue
- Whip the egg whites with sugar and water
- Mix well with mascarpone mixture
4. Heavy cream
- Medium whip
- Mix well with the mixture above and 4g Gelatin
STRAWBERRY FILLING
- Melt gelatin and mix well
STRAWBERRY SYRUP
- Mix well
PRESENTATION
- Dip lady fingers in strawberry syrup and put it in a heart cake pan
- Continue with a mascarpone layer, put it in the fridge for 5 minutes
- Continue with a strawberry layer, put it in the fridge for 5 minutes
- Repeat with a lady fingers dipped strawberry syrup
- Continue with a mascarpone layer, put it in the fridge for 5 minutes
- Decorate with fresh strawberry slides
