PORK TENDERLOIN WITH APRICOT SAUCE
Soft tenderloin, soaked in the spice, served with a layer of crispy bacon. It would be remiss not to mention the special highlight of this dish comes from sweet and sour apricot sauce made from ANDROS Frozen Apricot Puree.
ANDROS INGREDIENTS
I/ INGREDIENTS
- 400g pork tenderloin
- 30g sugar
- 4g salt
- 4g pepper
- 6 slices of ham
APRICOT SAUCE
- 200g ANDROS Frozen Apricot Puree
- 2g of salt
- 7ml yellow mustard sauce
II PREPARATION
- Marinated tenderloin with brown sugar, salt and pepper
- Wrap the tenderloin part with bacon
- Preheat the pan and grill the pork until golden (15 minutes) and place in the oven for 10 minutes
APRICOT FEVER
- Cook apricot mixture with salt for 10 minutes, cool and add mustard
- Brush the sauce around the pork and place it back into the oven until cooked inside
- Garnish with apricot sauce
