- Soft butter: 60 g

How to make:
- Mix yolks with sugar, whip slightly (steam type)
- Add fresh milk, sift finely, let cool
- Lightly beat the butter, add the milk, egg and vanilla mixture. Beat well

- Salt: 20g
- Sugar: 140g
- Fresh milk: 500g
- Yeast: 15g
- Sliced butter: 500g
How to make:
- With the exception of the sliced butter, add all ingredients to the mixer until the dough is smooth and no longer sticks to the hands or sides of the machine.
- Place the dough in the refrigerator until it reaches 4 degrees Celsius.
- Add sliced butter and then roll and fold the dough into 3 out of 3 layers.
- Cut the dough thinly, forming small portions according to the desired size and shape.
- Let the dough rest at 30°C for 90 minutes.
- Spread egg on top of pastry.
- Bake at 190°C for 20 minutes or until there is a nice golden color.

Prepare:
- Wheat flour: 1000g
- Salt: 20g
- Sugar: 40g
- Butter: 600g
- Cold water: 100ml
How to make:
- Mix the flour, salt, sugar and butter until the mixture is consistent.
- Add cold water and mix until the dough is smooth and thick.
- Keep refrigerated until use.
- Knead, roll the dough, create pastries with the desired thickness and size. Pour the dough into the tart molds.
- Bake at 180°C for 20 minutes.
2. ALMOND CREAM
Prepare:

- Butter: 200 g
- Powdered sugar: 200 g
- Almond powder: 200 g
- Eggs: 4 eggs
How to make:
- Use the mixer to beat the softened butter, powdered sugar, almond flour, and eggs.
- Then keep the cream cold in the refrigerator.
